2 cups of raw cashews
5 Tablespoons of coconut oil
1 Teaspoon of vanilla essence
1 Pinch of Himalayan sea salt
3 Tablespoons of raw honey
4 Heaped tablespoons of raw cacao powder
1 Small handful of desiccated coconut
1. Blitz the cashews to your desired texture.
2. Prepare a water bath on a medium heat. Add the coconut oil and melt. Add the honey, vanilla and salt, combine well.
3. Mix the cashews and coconut into the mix, you are looking for a medium consistency, think yet able to pour.
4. Pour the mixture into moulds, keep the mix to approximately 1cm deep. Put into the freezer and enjoy once set.
Get creative and add your favourite ingredients, nuts, berries etc. etc.
