There is some evidence that activated almonds are better for you and allow you to gain the full nutrient benefits of this amazing nut when compared to raw almonds. I don't know about all of that scientific stuff, what i do know is activated or soaked almonds taste incredible and so does coffee..... lightbulb moment! Why not soak your almonds in coffee? The results are delicious.
Cold coffee (filtered is ideal)
1. Brew your favourite coffee and leave in the fridge to cool.
2. Place the desired amount of almonds into a bowl.
3. Cover the almonds with the cold coffee and leave in the fridge overnight.
4. Drain the excess and place in jar making sure you keep them in the fridge. Other recipes call for you to then roast the almonds, I like them without roasting, your call.
