Coriander, corn fritters, say that 10 times in a row!

This week we continue our obsession with eggs and deliver you a gourmet creation that is not only delicious and surprisingly good for you but is sure to impress your breakfast guests. 


1 cob of corn

1/4 cup of coconut flour

1 pinch of salt

4 eggs

Green sriracha to taste

Coriander to taste


1. Remove the kernels from the corn, add to a large mixing bowl with all of the above ingredients. (You are looking for a medium thickness batter)

2. In a hot non-stick frying pan spoon the batter into pancake size amounts and cook until golden. 

3. Serve and enjoy.



If you like things a little hot add more hot sauce or chilli. If you are looking for something more substantial try adding some bacon and a simple salad.
