Another minute manipulator for those of you who never have enough time in the morning.


12 eggs

1 cups of diced bacon

1 diced brown onion

2 cloves of diced garlic

1/2 of a diced capsicum

1 diced tomato 

1/2 cup of milk


1. Pre-heat a fan forced oven to 180 degrees.

2. Fry off the onion, bacon, garlic, capsicum and tomato (in that order) in your favourite oil until brown then set aside.

3. Whisk the eggs with 1/2 a cup of milk and pour evenly into muffin cups (works out 1 egg per cup). Add the fried ingredients evenly.

4. Bake in the oven until they rise and start to become golden brown.


Store in containers for up to a week and enjoy at your leisure either hot or cold.
